Dump Dinners Make Your Dinner Easy!

Last week I was fortunate enough to go to the International Home and Housewares Show in Chicago. It was an overwhelming long weekend of seeing new items and meeting amazing new people. One of the people I was lucky enough to meet and allowed to interview was Cathy Mitchell. Cathy Mitchell is the author of Dump Dinners and other cookbooks. 

Cathy was so down to earth and open to our questions that it was just like sitting around your own kitchen table with a favorite aunt or grandmother. I expressed my frustration when cooking and modifying recipes because of my husband's lactose allergy and with him being pre-diabetic. She encouraged me to try some of the recipes and told me how easily modifiable they are for allergies. Cathy was not a chef who would never want a recipe changed, in fact, she told us to "play" with the recipes.


Dump Dinners Review
I was given the Dump Dinner cookbook to read and try out. The first thing I noticed are the tips inside. Cathy's tips are those that are so easy and smart, you ask yourself why you hadn't thought of them before! They are timesaving and just brilliant. So I thought I would test a recipe for dinner after work. I was excited because I had most of the ingredients on hand. I tried the "Spicy Beef and Rice Skillet Dinner". Now I didn't have a red bell pepper but instead used frozen Mexican Vegetable mix which included corn, broccoli and red bell peppers. My husband doesn't like minced onions so I cut them into large quarters to make sure that I got the same flavoring. As I cooked it my house smelled wonderful and my husband kept asking when dinner would be done. Keep in mind the whole recipe didn't take more than 35 minutes from start to finish......the smell was just that good! 

The finished meal looked and tasted every bit as good as it smelled. My husband and I both commented that we thought it was one of the most flavorful meals we had had in a long time. How exciting that it was so quick and easy...........just what I need after a long day at the office. I highly recommend this book for everyone and can't wait to cook more of Cathy's recipes.
